Pumpkin Pancakes

Make this flour mix and store ready for use any time you feel like pancakes!


4 cups Plain Flour

3 Tablespoons Baking Powder

2 Teaspoons Bicarbonate of Soda

1 Teaspoon Salt

2 Tablespoons sugar

Mix together all dry ingredients and store in a airtight container until you are ready to make pancakes.

Pumpkin Pancakes:

1 cup Flour Mix

1 Egg

3/4 cup Milk

1/4 cup puree of pumpkin

1 Tablespoon melted Butter

Mix all wet ingredients into the flour mix, do not over work your batter.

In a moderate frypan add a little butter and a couple of tablespoons of batter per pancake.

Flip each pancake when holes appear in the batter, remove when light golden in colour.

Drizzle  with honey and cinnamon. Enjoy
