“Walnut and Cherry Flapjacks”
This recipe is sure to become everyones favourite treat.
Flapjacks are so easy to make, and so versatile.
1 1/4 cups plain flour, sifted
1 cup rolled oats
1/3 cup caster sugar
1 teaspoon Cinnamon powder
1 cup Walnuts roughly chopped
1/2 cup Dry Cherries sliced
1/2 cup shredded coconut Lightly toasted
2 Tablespoons Sesame Seeds Toasted
1/4 cup Roasted Pistachios lightly crushed
2 tablespoons golden syrup or treacle
1 teaspoon Queens Vanilla Bean Paste
125g unsalted butter, chopped
2 Tablespoons water
1/2 teaspoon bicarb soda
Preheat oven to 170°C.
1: Place the dry ingredients – flour, oats, sugar and sesame seed, coconut and walnuts, cherries and pistachios in a large bowl and stir to combine.
2: In a small saucepan place the golden syrup and butter and stir over low heat until the butter has fully melted. Mix the bicarb soda with water and add to the golden syrup mixture. It will bubble whilst you are stirring together so remove from the heat.
3: Pour the liquid into the dry ingredients and mix together until fully combined. Put the mix into a deep dish (about 20 x 30cm) lined with baking paper flatten the dough even and cut into squares before baking.
Bake for 20 minutes or until golden brown. Once baked allow the flapjacks to cool in the baking tin.
